Burnet gajari’tart

P_20180124_171008_MT_2After many experimenting I have come up with this delicious yet interesting dessert.

Burnet gajari tart is a indian fusion dessert, combination of sweet tart ,gajar halwa and rabari.

Type of dish: dessert

Preparation time  : 30 minut

Cooking time

: 60 minute

Presentation time : 5 minute

Equipment need:

Thick bottom cooking pot, grater, tart shell,oven,kitchen torch

Gajar halwa

Recipe

1 Kg Carrots
1 1/2 Litre Milk
8 Green cardamoms
5-7 Tbsp Ghee
5-7 Tbsp Sugar
2 Tbsp Raisins
1 Tbsp Almonds,pistachios

Method (How to Make Gajar Ka Halwa)

  • Peel and grate the carrots.
  • Simmer in milk with the cardamom until liquid evaporates.
  • Heat ghee in a heavy pan and add the carrot mixture.
  • Cook over a gentle flame for 10-15 minutes.
  • Stir in sugar and continue cooking until the halwa turns deep reddish color.
  • Stir in dried fruit and keep a side

Sweet tart

Recipe

  • TART SHELL
  • 2 1/2 cups all-purpose flour
  • 1/8 teaspoon table salt
  • 1 cup cold unsalted butter, cubed
  • 1 cup powdered sugar
  • 3 large egg yolks
  • Parchment paper

Prepare Tart Shell:

Pulse flour and salt in a food processor until combined. Add cubed butter, and pulse 10 to 12 times or until mixture resembles coarse breadcrumbs. Add powdered sugar and 3 egg yolks, and pulse just until mixture comes together and pulls away from sides of bowl. Divide dough in half, and flatten each half into a disk. Wrap in plastic wrap, and chill 1 to 12 hours.

Step 2

Preheat oven to 350°. Place dough disks on a lightly floured surface, and roll each into a 12-inch circle. Fit dough circles into 2 (9-inch) fluted tart pans with removable bottoms; trim edges. Line tart shells with parchment paper, and fill with pie weights or dried beans. Bake at 350° for 20 minutes or until edges are light brown. Remove weights and parchment paper, and bake 5 to 10 minutes more or until light golden brown.

After both are ready put gajar ka halwa in sweet tart topped with rabari then caramelized by kitchen tart  on top .
